Many people I know seem to be unsure of how to prepare any kind of fish other than salmon. It's really so easy and healthy, I'd like to share with you what I do for a variety of white fish:
I buy fresh, not previously frozen fish usually only from Whole Foods as I find their quality better than most grocery stores. Petrale sole, sea bass, tilapia and cod are my go-to white fish as I save halibut, mahi mahi and other high priced fish for special occasions given the cost.
1) Gently rinse the fish off with water
2) Cover a baking pan in tin foil (this way, you don't have to clean the pan)
3) Very generously sprinkle paprika and dill all over the fish.
4) Drizzle your favorite Italian dressing on top of the fish as well.
5) Bake at 375 for 10-13 minutes depending on the thickness of the fish.
Don't be afraid to undercook it as we tend to overcook more often. The fish is ready once it easily flakes with a fork.
You can also substitute lemon and salt instead of the Italian dressing.
